Spicy Corn Fiesta Soup

Two things happened tonight.... I decided I wanted soup and I was determined to not leave the house. Challenge accepted! What happened was the "Perfect Storm" of homemade soups! Seriously guys, I haven't been grocery shopping in awhile. I just went in the cupboards, fridge, and freezer and pulled out all the ingredients that could be used in soup.  I try new recipes all the time, but this thrown together soup blew the last 10 soups I've made from recipes out of the water, plus it made me feel like I was in a food network competition. The lipton soup substituted for the broth and added a pasta element, and the cheese in the Habanero and Jack Cheese Chicken sausage melted into the broth to make it creamy without adding milk or cream. It was simple to make and very delicious so I thought I'd share!

Spicy Corn Fiesta Soup - An Amy Collas Original


Ingredients
1 Onion
1 Can of Cream Corn
1/2 Bag of Frozen Corn
1 Can of Green Chiles
1 Can of Tomato Paste
1 Package of Habanero and Jack Cheese Chicken Sausage
1 Box of Lipton Soup Secrets Chicken Noodle Soup (Two packets - broth substitute and noodles!)
1 Tbsp of Butter
Fresh Thyme
Sriacha
Paprika
Cayenne
Cumin
Salt and Pepper

Saute butter and onions in the soup pot. After a few minutes add the cubed sausage. Then add everything else and about 5 cups of water. Simmer for awhile. I know.....very technical. DONEZO!
